If there is one thing that unites South Africans it is a Braai. No matter where in the world you find yourself, there is nothing quite as unique as a Braai. Now before I get into the recipes I created with Eskort Back Bacon, I need to let you in on a little secret. You might have spotted these on the shelves already. Eskort has launched something new for the love of bacon and it is Braai Bacon. Yes, you read that right. The first of its kind and just to show you the deliciousness of it and also to convince you to try it, see the evidence below. Check out all the new products in my video here. In the pictures you will spot all your favorites. I have been challenged to create a recipe using Eskort Back Bacon. Now this was a tough one. When it comes to recipe development, you all know that I always think outside of the box and to create recipes that are easy, does not take hours to prepare, but most of all is delicious! On a recent poll I asked the question: “What else can you do with back bacon, besides having it as a side? And most of you just had no idea where to start. So here goes. Using Back Bacon three ways. These dishes can be enjoyed anytime of the day. If I have to choose my favorite dish it would have to be the Back Bacon fully loaded.
Let’s start with my idea of the ultimate breakfast stacker. This is one of those meals that you can either enjoy early morning or for brunch. Ideally I wanted to make an eggs benedict version, but I did not have some Chardonnay to use for my easy hollandaise sauce. You are probably saying, Chardonnay? but i promise you it is the easiest hollandaise sauce you will ever make. I will definitely share it when I do my Breakfast Ideas posts.
The Back Bacon Stacker
The main ingredient is obviously to have your Eskort Back Bacon, crispy. Then your choice of bread. I know that an english muffin is traditional, but I went with freshly baked ciabatta bread, right from the bakery down the road. Do you have a herb garden? I am proud to say that all the herbs , rocket and lettuce you see is fresh from our garden at the back.
You will need
1 pack of Eskort back bacon
1 egg
Half an avo
Smoked Paprika, salt and pepper
I used half a ciabatta roll
Handful of Rocket or lettuce
The Method
- Fry your Back Bacon and egg.
2. Butter half of the ciabatta roll or if you want toast it slightly.
3. Add your rocket and layer your avo
4. Use smoked paprika, salt and pepper.
5. Place your Eskort Back Bacon on top.
6. Place your egg on top and ENJOY!
This will easily take you less than 10 minutes to put together. Check out the video here
The Back Bacon Fettuccine
This would be my perfect lunch idea with a bottle of Sauvignon Blanc to paired with it. Best to serve this as soon as it comes out of the pot. A dish that you can make any time of the year. I just love the versatility in this dish. You do not have to add only the Back Bacon from the Eskort range, but any of it.
You will need:
1 pack of Eskort Back Bacon
Fettuccine of your choice
Mushrooms
Garlic
250ml Fresh cream
Cup of cheddar cheese
Salt and pepper for taste
The Method
- Boil your water and add fettuccine when ready.
2. Slice your mushrooms in some olive oil and garlic.
3. Cut your Back bacon into smaller pieces and add that to your pan of mushrooms and garlic.
4. Fry the above and add your fresh cream and cheddar cheese.
5. Add your cooked fettuccine and enjoy!

The Back Bacon Fully Loaded
This is the perfect dish to make when you have company coming over. You can use it as a starter. You can add anything to it. To save time I bought store bought dough.
You will need:
Cup of sliced mushrooms
Cup of cheddar cheese
Half a can of baked beans
two eggs
1 pack of Eskort Back Bacon
1 pack of Eskort mini cheese grillers
Bread dough
Two eggs
Tomato sauce
The Method
Pre-heat your oven to 180 degrees
- Pre-heat your oven to 220 degrees and prepare the dough.
2. Smother with tomato sauce.
3. Fry up your mushrooms; back bacon, mini cheese grillers and eggs beforehand.
4. In each corner place your ingredients.
5. Place the pizza on a pizza stone and into the oven for 8 minutes
